If you where to put a set of full length headers and crossover pipe on a
stock vette but not get a tune done would you throw any error codes?
Could you still drive the car or would mileage suffer and what would the
performace increase be?
Is it a must to be tuned after the install?

I haven't installed headers on my vette, but know others who have and you do not need a tune after installation. Exhaust system mods aren't monitored by any of the computer modules that I know of except for catalitic converter. When you install headers, you need to either keep the original converter (with shorty headers) or include high flow converters with long tube headers.
