I don't think you'll detect any difference in the 1/4 mile. I think tire width friction is a way bigger variable then saving 2-3 lbs on the wheels.

For instance, if you go with a skinnier front tire, to reduce rolling and wind resistance, I think you could see a minimal but measurable gain.

Drag racing aside... lighter wheels means less unsprung mass which will reduce wear on suspensions (like your shocks), will help handling to some degree, and you could see a small improvement in fuel savings due to the reduction of rotating mass.

Of course, you'll be out the $$$ you spent on the wheels, so I'm not sure you could ever make up for it.
